For delicious baked butternut squash, place 1 butternut squash, halved lengthwise and seeded, cut-side down in a 9-by-13-inch baking dish in an oven that is preheated to 350 degrees Fahrenheit. Pour water around the squash halves, and bake for 1 1/2 hours. Season with butter, salt and pepper.
For a sweeter version of baked butternut squash that is equally delicious, use 1 butternut squash that weighs approximately 2 pounds, and cut the squash in half lengthwise, discarding the seeds and the stringy pulp. Brush the squash halves with 2 tablespoons melted butter. In a small bowl, combine 1/4 teaspoon salt, 1/8 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg and 1/8 teaspoon pepper. Sprinkle the mixture evenly over the squash halves. Place 2 teaspoons brown sugar in each half of the squash, and then sprinkle an additional 2 teaspoons brown sugar over the cut sides of the squash.
To bake, place the squash in an 11-by-7-inch baking dish that has been coated with cooking spray. Cover and bake the squash at 350 degrees Fahrenheit for about 40 minutes. Uncover the dish, and bake another 15 to 25 minutes longer, or until the squash is tender. This recipe yields about six servings.
