Preheat your oven to 325 degrees Fahrenheit. Combine 2 1/2 cups of all-purpose flour, 1 teaspoon of salt, 1/2 teaspoon of baking soda and 1/2 teaspoon of baking powder into a bowl, and stir. In another bowl, add 2 sticks of room temperature butter, 3 cups of granulated sugar and 2 tablespoons of grated lemon zest. Use a mixer at medium-high speed to beat the ingredients together for three to four minutes.
Add 4 tablespoons of lemon juice and 6 large eggs to the butter mixture. Mix until everything is blended.
Mix half of the dry ingredients into the wet ingredients, then add 1 cup of plain, full-fat Greek yogurt. Add the rest of the dry ingredients and then blend using the lowest speed possible. Do not overmix.
Prepare a Bundt pan by covering the inner surface with butter. Pour the cake batter into the pan, and place it into the oven. Bake the cake for 60 to 75 minutes. Once done, remove the cake from the oven, and allow it to cool in the pan for up to 30 minutes. Transfer the cake to a wire rack to cool completely.
In a bowl, mix 1 cup of confectioners' sugar and 1 teaspoon of lemon juice to form a glaze. Pour over the cooled cake.Learn more about Desserts
