For delicious beef stew, use around 2 pounds of cubed stew meat. Organic stew meat is more tender and flavorful. In a large pot, braise the beef evenly in butter. Add lightly sautéed chunks of carrots, onions, potatoes and celery. Add spices, water and beef stock. Simmer for three hours.
