Place the ripe, rinsed and patted-dry papaya on top of a clean cutting board. Use a long, sharp knife to slice the papaya in half lengthwise.
Use a large metal spoon to remove the papaya seeds from the center of the fruit.
Hold one papaya half in your hand, and use your other hand to slide a sharp, medium-sized knife downwards between the papaya fruit and its skin using long, steady strokes.
Use the knife to cut the papaya chunks into desired size.
