Some cucumber salad recipes from Paula Deen include zesty cucumber salad, cold cucumber salad, and cucumber, tomato and onion salad. The recipes take 10 to 15 minutes and include ingredients such as mayonnaise, tomatoes, onions and dill.
To make the zesty cucumber salad, whisk 3 tablespoons of white wine vinegar, 2 tablespoons of olive oil and 1 teaspoon of sugar in a bowl. Toss in 3 peeled and sliced cucumbers, one 10-ounce container of halved grape tomatoes, 1/2 of a thinly sliced Vidalia onion and 2 tablespoons of chopped dill. Season the salad with salt and pepper, and let it sit for 20 minutes. This recipe yields four servings.
For the cold cucumber salad, put 2 peeled and diced cucumbers into a glass bowl, and sprinkle them with 1 teaspoon of salt and 1 teaspoon of vinegar. Cover the bowl and let the cucumbers sit for 30 minutes, pour off the remaining liquid, and strain the cucumbers in a colander for another 30 minutes or until the liquid is fully drained. Add 1/2 cup of mayonnaise, 1/4 cup of sour cream, 1 tablespoon of dill and some ground pepper. Cover the salad, and refrigerate it. This recipe yields four servings.
