Some slow cooker cabbage recipes are roasted cabbage and potatoes, stuffed cabbage and cabbage soup. Cabbage with corned beef is also a popular slow cooker recipe. Cabbage is a good source of folates, fiber and essential vitamins. It is also low in cholesterol and saturated fat.
For the first recipe, one head of cabbage is cut into wedges and cooked in a slow cooker with cut potatoes, garlic cloves, pepper, salt and balsamic vinegar. Cabbage soup is made using sliced vegetables, large chunks of cabbage and beans if desired. Vegetable, beef or chicken broth can be mixed with water for a base, along with spices to taste. Liquid should mostly cover the dry ingredients, and the soup should be allowed to simmer on low for several hours before serving. Cabbage with corned beef can be made using a corned beef brisket and cabbage covered with cider vinegar, water and brown sugar. These ingredients are simmered on low all day until ready to serve.
