For an easy and creative pasta recipe, creamy tomato pasta is a main dish made in less than 30 minutes with only six ingredients. Also using only six ingredients, cavatappi with red peppers and prosciutto is a simple yet savory main meal.
For the creamy tomato pasta, bring a large pot of water to a boil and add a 16-ounce package of spaghetti. Heat 2 tablespoons of olive oil in a large skillet. Add one chopped onion to the olive oil and cook until tender. Add one 26-ounce jar of pasta sauce to onion mixture and add to the skillet, along with a 15-ounce can of undrained diced tomatoes. Bring to a simmer, cube an 8-ounce package of cream cheese and add to pasta mixture, stirring until cheese has melted and the sauce is creamy. Drain pasta and add to skillet, tossing to coat.
Alternatively, to prepare the cavatappi, bring a large pot of salted water to a boil and add 1 pound of cavatappi. In a skillet, heat 1 tablespoon of olive oil. Add a chopped jumbo onion and cook until browned. Drain pasta, setting aside 1 cup of pasta cooking water. Add onion mixture and the cooking water, cooking on medium on minute, tossing. Add 4 ounces prosciutto, ½ cup Manchego cheese and ½ teaspoon freshly ground black pepper. Toss to coat, serve topped with Manchego cheese.
