Bring the bones, vegetables and herbs to a simmer. Do not let it reach a boil. Reduce the heat until the stock is barely bubbling. Keep the pot uncovered, and allow the mixture to simmer for 6 to 8 hours.
Carefully strain the mixture through a fine mesh strainer. Use a clean cloth or paper towel to soak up any excess fat from the surface of the broth. Another option is to chill the broth in the refrigerator until the congealed fat layer can be removed with ease.
