Two popular recipes on the Newfie Chatter Box Facebook page are Molasses Buns and Nancy's Gumdrop Cake. Each post includes a photograph and detailed recipe, as well as the recipe's source.
To make Molasses Buns, gather 1 cup molasses, 1 cup raisins, 1/3 pound shortening, 1/3 pound butter and 4 cups flour, as well as 1 cup warm water, 2 tablespoons brown sugar, 3 teaspoons baking soda, 1/4 teaspoon allspice and a pinch of salt. Sift the flour, allspice, soda and salt together and set aside. In a large mixing bowl, combine the molasses and brown sugar. In a saucepan or microwave, melt the butter and shortening, then add to the molasses mixture. Dust the raisins with 2 tablespoons flour, then add them to the molasses mixture. Add the water and flour mixture. Stir well.
Formation of the dough is not described in the Facebook recipe, but a similar recipe on the Pinterest page suggests rolling the dough to a 1-inch thickness before cutting it into squares and placing them into a baking pan. Bake for 40 minutes at 400 F. Note that some users suggested a bake time of 20 minutes instead, so check the oven at or before the 20-minute mark.
To make Nancy's Gumdrop Cake, gather 1 cup butter, 2 cups sugar, 3 eggs, 1 cup warm water and 3 1/2 cups flour. Also required is 1 1/2 teaspoons baking powder, 1 1/2 teaspoons salt, 1 teaspoon each vanilla and lemon extract, and 1 cup chopped gumdrops tossed with 1/4 cup flour. Cream the butter and sugar. Beat in eggs one at a time. Blend the dry ingredients in a separate bowl. Fold into butter mixture, adding water slowly until blended. Pour into a greased, floured tube pan and bake at 350 F for approximately 90 minutes.
