For a healthy granola recipe, combine 4 cups rolled oats, 1/4 cup sunflower seeds, 1 cup chopped nuts and 1/4 teaspoon each salt and cinnamon in a large bowl. In another bowl, stir together 1/3 cup each canola oil and honey, 1/4 cup maple syrup and 1/2 teaspoon vanilla.
Add the liquid mixture to the dry mixture and stir. Line 2 baking sheets with aluminum foil, and spread half the granola on one and half on the other. Bake at 350 degrees for 20 to 25 minutes, stirring granola and turning the pans once to achieve an even color. The granola should be golden brown when done. Remove granola from oven and let cool in pans. Place cooled granola in a large bowl and add 1 cup of dried fruit. Some options are dried cherries, golden raisins or dried cranberries. Options for the nuts are peanuts, almonds or pecans.
