When making this version of Sweetie Pie's Mac and Cheese, you need elbow macaroni, whole milk, evaporated milk, eggs, butter, colby, Monterey jack, Velveeta, American and sharp cheddar cheeses as well as salt, white pepper and sugar. This dish takes one hour and 15 minutes to prepare and serves eight.
To start, preheat the oven to 350 degrees Fahrenheit. Next, put 1 pound of cooked elbow macaroni in a 9-by-13 dish and set aside.
Combine 1 cup whole milk with 2 12-ounce cans evaporated milk and three eggs in a large bowl, and mix well. Set the mixture aside. Meanwhile, cut 1 cup butter into small pieces, and add to the cooked pasta in the dish. Next, add cheeses to the pasta, to include 1/2 pound colby cheese, 1/2 pound shredded Monterey jack cheese, 1/2 pound shredded sharp cheddar cheese and 1 pound Velveeta cheese, cut into chunks. Proceed to pour the milk-and-egg mixture over the pasta and cheeses. Season the dish with salt, 1 tablespoon white pepper and 1 tablespoon white sugar, and mix well.
Finally, sprinkle the pasta dish with 1 cup shredded American cheese or 1 cup shredded mild cheddar cheese, and bake in the oven for 30 to 45 minutes, until the top is golden brown.
