To make a copycat recipe for Olive Garden's Italian dressing, combine 1/4 cup of extra virgin olive oil, 2 tablespoons of white wine vinegar, 3 tablespoons of Miracle Whip salad dressing, 1 tablespoon of lemon juice, 1 tablespoon of water, 2 tablespoons of grated Parmesan cheese, 1/4 teaspoon of garlic salt and 1/2 teaspoon of Italian seasoning in a blender, and mix until smooth. Add an extra tablespoon of water for a thinner dressing.
To make an Olive Garden-style salad, mix your favorite greens with thinly sliced red onion, pickled peppers, tomato wedges and sliced black olives. Drizzle the mixture with the homemade dressing, and garnish with croutons and more grated Parmesan cheese.
Store extra salad dressing in the refrigerator for up to 10 days. The dressing works as an Italian-flavored marinade for meats and vegetables in addition to a salad topping. Double or triple the recipe to have more on hand when you need it.
Add up to 1 tablespoon of light corn syrup or granulated sugar for a slightly sweeter dressing. Try substituting Romano cheese or a Romano-Parmesan blend for the straight Parmesan. Fresh chopped parsley or herbs make a nice addition. If you do not have a blender, mix the dressing with a food processor or whisk.
