Preheat a skillet on medium heat. If the skillet is not non-stick, use non-stick spray on the skillet.
Combine 1 1/4 cups of flour, 1/4 cup of granulated sugar, 1 teaspoon of baking powder and 1 teaspoon of baking soda in a blender or mixer. Add 1 egg, 1 1/4 cups of buttermilk, 1/4 cup of cooking oil and a pinch of salt to the blender or mixer bowl. Blend or mix until the pancake batter is smooth and uniform.
Ladle 1/3 cup of pancake batter into the heated skillet. The batter should form a 5-inch pancake. When the edges of the pancake begin to harden after approximately one to two minutes, flip the pancake with a spatula. The cooked side of the pancake should be golden brown. Cook for an additional one to two minutes, until the other side is golden brown. Remove from the skillet.
Repeat the cooking process until you use all of the batter. This recipe makes 8 to 10 5-inch pancakes.
