Cooking 101: Crock-Pot Meatloaf Recipe


Meatloaf is a go-to comfort food for many people. Although the classic recipe is baked or roasted in the oven, letting the slow cooker do all the work instead makes it easier to prep other dishes or spend time with family. Prepare the ingredients, add them to the slow cooker and, in about six hours, you'll have a hearty, cozy meal ready.


1. Line the bottom and sides of the slow cooker with aluminum foil. Lightly oil the foil or spray it with cooking spray to prevent sticking.

2. In a large bowl, combine the eggs, breadcrumbs, milk, onion, Worcestershire sauce and ground meat. Mix the ingredients until everything is evenly combined.

3. If the mixture looks a little dry, add some ketchup or extra Worcestershire sauce for more moisture.

4. Shape the meat mixture into a loaf and add it to the slow cooker. Add the lid and cook the meatloaf on the low setting for about six hours, or until the internal temperature reads 160 degrees Fahrenheit when an instant-read thermometer is inserted in the thickest part.

5. In a small bowl, combine the ketchup and brown sugar. Spread it on the top of the meatloaf. Continue cooking the loaf for about 15 to 20 minutes.

6. Transfer the meatloaf to a platter and let it rest for about 10 minutes before slicing and serving.

Crock-Pot Meatloaf Recipe Variations:

Give this recipe some Italian flair and a little extra nutrition by adding vegetables to the mix. Examples of vegetables that work well include:

  • 1/2 cup finely diced zucchini or yellow squash
  • 1/2 cup finely chopped roasted red peppers
  • 1/2 cup chopped fresh parsley
  • 3 tablespoons minced garlic

Another way to change things up is to create a stuffed slow cooker meatloaf. To do so, roll out the uncooked meatloaf mixture into a circle on wax paper. Add 1 to 2 cups of diced or shredded cheddar, provolone or mozzarella, along with some chopped spinach or another vegetable, into the center of the flat circle. Fold up the sides of the circle to cover the stuffing. Form it into a loaf shape. Cook this for six hours on low.

  • 1 1/2 pounds ground turkey, beef or meatloaf mix
  • 2 eggs, beaten
  • 1 medium onion, peeled and chopped
  • 3/4 cup to 1 cup whole milk
  • 2/3 cup to 3/4 cup breadcrumbs or quick-cooking oats
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • Salt, to taste
  • Ground black pepper, to taste
