Grilled Vegetable Basket

- 8 oz., cremini mushrooms
- 1 zucchini
- 1 red bell pepper
- 1 Vidalia or white onion
- 1/3 cup bottled balsamic vinegar salad dressing
- Prepare the vegetables
- Marinate the vegetables
Remove the seeds from the bell pepper and cut the pepper and zucchini into slices of around a quarter of an inch thickness. Slice the onion into rings of around the same thickness.
Heat the grill to a medium setting and place the vegetables in a dish with the balsamic salad dressing. Coat evenly and allow to marinate while waiting for the grill to heat.
Transfer the vegetables to the grill basket and cook 4 inches from the heat for around 20 minutes, or until fully cooked and slightly charred. Turn once during cooking time. Serve hot.
