This recipe is for an easy and spicy soup that uses fresh turtle meat.

In a large saucepan, combine the meat, water, 1 teaspoon of salt and 1/4 teaspoon of cayenne pepper and bring to a boil, skimming off the foam. Lower the heat and simmer for about 20 minutes. Turn off the heat and save the liquid. Dice the meat and set aside.
Combine the butter and flour in a separate large saucepan and cook for 6 to 8 minutes, stirring constantly. Add in the shallots, onion, celery and bell peppers and cook for 2 to 3 minutes. Add in the garlic and bay leaves and cook for 2 minutes. Add in the turtle meat and tomatoes and cook for 5 to 6 minutes.
Add the Worcestershire sauce, salt, cayenne, lemon juice, sherry and the leftover turtle stock and bring to a boil. Reduce heat and simmer for 10 minutes. Then, add in the remaining ingredients and simmer for 45 minutes.
