Oven Roasted Turkey Breast
This is a tried and tested way to cook turkey breast with gravy. The dish serves six people.

- 5 lbs., bone-in turkey breast
- 1 Tbsp., coarse salt
- 1 Tbsp., olive oil
- 1 Tbsp., all-purpose flour
- 1/2 tsp., ground pepper
- 1/2 cup, water
- Prepare the turkey and equipment
- Roast the turkey
- Prepare the gravy
Rinse and dry the turkey breast well. Rub turkey breast with oil, salt and pepper. Fit a V-shaped rack into a small roasting pan. Place turkey breast at the center of the rack.
In an oven preheated to 350 degrees Fahrenheit, cook the turkey for approximately 1 hour 20 minutes. Using an instant-read thermometer, check that the temperature in the thickest part of the turkey breast is 165 degrees. Juices running from the turkey should be clear. Remove from the oven and set aside for 10 minutes.
Set the roasting pan on the cooker over high heat, having taken the rack out first. Add the flour to the fat in the pan. Scrape and whisk to combine. Pour the water in and create gravy of smooth consistency, using a whisk. This should take 2 minutes. Use the gravy to accompany the turkey.
