Cooking sweet potatoes in a slow cooker requires adding additional ingredients, and the sweet potatoes can cook on high for about four hours or low for about eight hours. The Food Network and Pillsbury provide recipes to cook sweet potatoes in a slow cooker.
The Food Network recipe makes a sweet potato soup. It includes one sweet potato, carrots, celery, leeks, lentils, ginger, 3/4 teaspoon of curry powder and 1 teaspoon of salt. In a 4-to-6-quart slow cooker, cook the ingredients on low for about eight hours.
The Pillsbury recipe includes 3/4 cup of packed brown sugar, 2 tablespoons of butter, 1
tablespoon of pumpkin pie spice and 1 tablespoon of vanilla. Spray a 5-quart slow cooker with cooking spray. Mix the brown sugar, butter, pumpkin pie spice, 1 teaspoon salt and 1 tablespoon of water in a microwaveable bowl.
Microwave the mixture uncovered on high for about one or two minutes, and stir in the vanilla. Add at least 3 pounds of sliced sweet potatoes, and stir the mixture. Pour the mixture into the slow cooker. Cover it, and allow it to cook on a high heat setting for four hours or until the sweet potatoes are tender. Top the mixture with marshmallows for additional taste.
