Place the heavy frying pan or cast-iron skillet on the stove top at medium to high heat. Once the pan is hot, add 1 teaspoon of cooking oil such as vegetable or olive oil.
Season the piece of steak with a liberal amount of salt and pepper on each side, and bring the steak to room temperature. Once the oil in the pan is hot, add the steak. To make the steak cook evenly, make sure it hits the pan at the same time while you sear in its juices. Flip the steak to sear it well on its top, bottom and edges. You may choose to use a spatula or spoon to ensure it is evenly seared.
Allow the steak to cook until it is done. A 1-inch thick steak takes approximately four minutes to be cooked rare and ten minutes to be well-done. Check the redness in the middle by using a sharp knife point. Add a drop of butter to each piece of steak just before it is done to add extra flavor. Once the steak is done, remove it from the stove top, and set it aside to cool for five minutes before serving.
