Cook smoked pork chops by frying them in a pan or cooking them in a grill pan with a glaze sauce or marinade. One simple sauce calls for brown sugar, bourbon and water.
Cooked smoked pork chops by rubbing them with a dry mustard and pepper mixture. Combine 1 teaspoon of dry mustard and 1/4 teaspoon of cayenne pepper in a small bowl, then rub the mixture over the pork chops. In another bowl, combine 1 tablespoon of light brown sugar, 1 tablespoon of bourbon and 2 tablespoons of water.
Add 1 tablespoon of safflower oil to a pan, and heat it on medium-high. Add the pork chops, turning them over after two minutes until they are seared. Remove the meat. Turn down the heat, then add the brown sugar and bourbon mixture, stirring and scraping the pan for 30 seconds. Place the pork chops in the glaze, and cook them for 1 minute longer, turning the chops until they are covered.
Another recipe uses a marinade instead of a glaze to produce a smokey flavor. Combine 1/4 cup of light brown sugar, 1/4 cup of honey, 1 tablespoon of vegetable oil, lime juice and 1 teaspoon of red pepper flakes. Pour the mixture in a resealable bag, and add the pork chops. Marinate the chops for at least 20 minutes before cooking them.
