- 4 sea trout fillets, with skin
- 4 tablespoons extra-virgin olive oil, separated
- 3/4 cup fresh basil
- 1 large garlic clove
- 1/4 cup fresh parsley
- 1 tablespoon water
- 1 tablespoon lemon juice
- Ground black pepper
- Preheat the oven
- Prepare the pan
- Prepare the sauce
Preheat the oven to the broil setting.
Oil a baking dish, and place the fish on the pan with the skin-side down. Brush 1 tablespoon of the olive oil on the top side of the fillets. Season with salt and black pepper, as desired.
Place the pan under the broiler and broil the fish for about 7 minutes, or until it is cooked through.
While the fish is broiling, use a blender to finely chop the basil, garlic and parsley. Slowly add in the remaining olive and puree, and then add in the remaining ingredients and salt and black pepper to taste. Serve the cooked fish with the sauce.
