To make plank grilled redfish, place a wood plank in water for the night. Coat the plank with oil lightly before cooking, and place several rosemary springs and lemon pieces on the plank. Season redfish with some salt and ground pepper, put it on the plank, preheat a grill to medium-hot, and put the plank in it. To make the fish taste better, place a cover on the grill. The fish should be done in 10 to 15 minutes.
You can cook fillets of redfish with the skin still attached on a regular grill. Coat the skin side with oil, rub a mixture of garlic, pepper, cayenne pepper and salt on the other side, and grill the fillets on medium-high for about 5 minutes on each side.
To make Cajun blackened redfish, melt 1/4 cup of butter, and leave it to cool. Mix 1 teaspoon of cayenne pepper, 1 teaspoon of freshly ground black pepper, 1 teaspoon of lemon pepper, 1 teaspoon of garlic powder and 1 teaspoon of salt in a separate bowl. Take four red drum fillets, brush them with melted butter, and sprinkle the spice mixture on them. Cook the fillets in a skillet on high for about 2 minutes on each side. After that, transfer the fish to a baking dish, add 1 1/4 cups of Italian-style salad dressing on top of it, and bake everything in an oven at 350 degrees Fahrenheit for about 30 minutes.
