To cook red snapper, clean the fish, make a stuffing from assorted vegetables, and cook the fish in an oven at 450 degrees Fahrenheit. Ingredients include 1 pound red snapper, 3 cloves minced garlic, 1 minced jalapeno pepper, 6 tablespoons butter and 1/4 pound chopped okra. Additional ingredients include 1 diced red bell pepper, 2 tablespoons chopped fresh parsley leaves, 2 tablespoons white wine, freshly ground black pepper and kosher salt.
To prepare the fish, scale the fish on both sides, and rinse it with clean water. Repeat the process twice, and then blot the fish dry with paper towels. Cut six slits on the fish. Mix the garlic with jalapeno, and put the mixture in every slit. Rub salt and pepper over the fish, and allow the fish to marinate for 30 minutes.
Put 1 tablespoon of butter a skillet, and melt it over medium heat. Add the pepper and the okra, and cook for five minutes, or until tender. Slit the belly of the fish, and stuff the fish with the mixture and the parsley leaves. Place the fish on buttered foil, and coat the fish with the remaining butter. Pour the wine over the fish.
Cover the fish with foil, taking care to leave an opening for steam to escape. Bake the fish for approximately 15 minutes at 450 degrees Fahrenheit.
