Pound the tenderloin with a mallet, and use herb sauce or stuffing for the tenderloin. Cheese or breadcrumb stuffing is popular, but leave an empty border of 2 inches on one side.
Nudge the tenderloin over to the bare side and use toothpicks or twine to secure the tenderloin. Sear the tenderloin over medium-high heat until the non-seam sides are brown. Move the tenderloin to its seam side and put the pork into an oven preheated at 475 degrees. Roast the pork for 10 to 20 minutes until the temperature internally is between 140 and 145 degrees Fahrenheit.
