Step 1: Start by using a knife to score the skin of the meat. This score should be deep enough to reach the fat, but not deep enough to reach the meat. Rub some salt into these scores, then turn the meat upside down and season with salt and pepper.
Step 2: Place the meat in a baking tray and put it in an oven that has been preheated to 425 degrees Fahrenheit. Leave it in the oven for 30 minutes, then turn the temperature of the oven down to 325 degrees. Take the pork out of the oven and cover it with foil before putting it back in. Leave it in the oven at this temperature for 4 and a half hours.
Step 3: Take the pork out of the oven, remove the foil and baste it with the fat in the baking tray. Once this is done, remove most of the fat from the tray and add some vegetables. Put the pork on top of the vegetables without any foil and put it back in the oven for an hour.
