How Do You Cook a Ham Shank?

An easy way to cook a ham shank begins by preheating an oven to 325 degrees Fahrenheit, making diagonal cuts throughout the ham and baking it in a shallow baking dish for 45 minutes to 5 hours, depending on the weight. Unlike poultry, the ham does not need to be washed before baking.

Many people like scoring a diamond pattern into the meat before cooking. If desired, brush on a glaze during the cooking process. The idea behind making the cuts is that it allows the glaze to reach deeper into the meat. Some people prefer putting whole cloves into the meat before placing it in the oven.

Hams should be cooked to an internal temperature of between 140 and 150F. Bone-in ham will require longer cooking times than boneless ham. For example, a boneless, cooked ham weighing between 3 and 5 lbs. will generally require cooking times of 1 to 1 3/4 hours to reach this internal temperature. A bone-in ham weighing the same amount will need to be cooked for 1 3/4 to 3 hours.

If using a glaze for the ham, add it during the final 20 minutes of cooking. Adding it sooner can cause it to burn.
