To cook fried cabbage and sausage, pre-cook sliced sausage in a skillet, and set it aside; then cook chopped cabbage and onion in margarine for five minutes. To finish, add the cooked sausage, diced tomatoes and garlic salt, and cook the mixture for another 10 minutes.
Slice 3/4 pound smoked sausage, and chop 1 small green cabbage and 1/2 cup onion. Cook sliced sausage in a non-stick skillet to remove excess fat. Drain the sausage on paper towels, and clean the skillet. Melt 3 tablespoons margarine or 3 tablespoons bacon fat in the skillet, and cook the cabbage and onion in the margarine until it starts to wilt. Add one 15-ounce can diced tomatoes and 1/4 teaspoon garlic salt, then cover and cook to desired tenderness.
To make a sausage, potato and cabbage skillet fry, heat 2 tablespoons olive oil or bacon fat in a large skillet or wok. Peel and cut 2 large potatoes into 1/4-inch cubes, add them to the oil, cover, and cook the potatoes in the oil for about five minutes. Turn the potatoes, and continue to cook them for another five minutes. Add 1 pound sliced kielbasa sausage, 1 diced onion and 2 finely diced jalapeños, and cook the mixture uncovered for eight to 10 more minutes. Add 2 cloves minced garlic, 6 cups shredded cabbage, 1/2 teaspoon caraway seed and 1/4 teaspoon cayenne pepper, and continue cooking until the cabbage is tender.
