To cook dry tapioca pearls, start with at least four times as much water as tapioca pearls. Boil the pearls in water for 30 minutes, stirring occasionally. Turn off the heat and steep the pearls for 30 minutes covered with a lid. Drain the pearls and rinse with cold water.
Tapioca pearls should be covered with sugar syrup before being eaten. The more pearls being cooked, the higher the ratio of water to pearl should be. For example, three kilograms of pearls should be cooked in six times the amount of water. Tapioca pearls are the main ingredient in bubble tea.
