To cook cubed butternut squash, peel and remove the seeds from 3 pounds of fresh squash, cut the squash into 1 inch cubes, place the cubes into a large saucepan, cover them with water, heat to a boil, and simmer until fork tender. Cubed butternut squash can also be baked.
Cooked cubed butternut squash is used in soups, stews, casseroles and many other dishes. You can take cooked cubed butternut squash and mix in a large bowl with 1/4 cup of brown sugar, 1/2 cup of butter, 2 tablespoons of maple syrup, 2 tablespoons of heavy cream, 1/2 teaspoon of salt, 1/2 teaspoon of pepper and 1/4 teaspoon of nutmeg. Whip this mixture at medium speed until smooth, and place in a buttered casserole dish. Cover the dish with foil, and bake at 350 degrees Fahrenheit for 10 to 15 minutes before serving. Right before serving, garnish with parsley, if desired.
To bake cubed butternut squash, place peeled 1 inch cubes from a large squash into a casserole or baking dish, sprinkle with 1/3 cup of brown sugar, 1/4 teaspoon of nutmeg and 1/4 teaspoon of cinnamon. Drizzle with 1/3 cup of melted butter and 2 teaspoons of lemon juice. Bake at 375 degrees Fahrenheit for about 40 minutes.
