Prep time: 15 minutes.

Total time: 25 minutes (provided that the rice is already cooked).

Number of servings: 4.

  • 3 cups cooked white rice
  • 12 ounces pork tenderloin, diced into half-inch squares
  • 4 large eggs, beaten lightly
  • 2 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut oil
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 3/4 teaspoon five-spice mix
  • 1/2 cup finely diced carrot
  • 5 ounces thawed frozen peas
  • 3 thinly sliced scallions on the bias
  • 4 cloves minced garlic
  • 1 cup finely chopped white onion

  1. Marinate the pork
  2. Mix the pork, hoisin and soy sauces, honey and five-spice in a bowl and marinate for 15 minutes.

  3. Stir fry the pork
  4. Heat the wok over high heat and add peanut oil. Add the onion and garlic once the oil shimmers and stir in the pork, saving the marinade. Brown for about 2 minutes.

  5. Add the rice
  6. Stir in the rice, carrots and marinade. Stir continuously until the marinade has been absorbed.

  7. Add the rest of the ingredients
  8. Make a well in the middle of the rice, and then pour the eggs in the well and scramble. Add the remaining ingredients and stir until well-mixed.
