Rinse the broccoli rabe under running water. Cut off the bottom inch from the stem with a sharp knife. Discard these ends.
Boil water in a large pot, adding a pinch of salt. Fill a large bowl with cold water, and add salt. Add ice cubes to the water.
Once the water is boiling, drop the broccoli rabe inside. Let it boil until it is tender, between one to three minutes.
Use a slotted spoon to remove the broccoli rabe from the boiling water, and plunge it immediately in the bowl of ice water. Keep the vegetable in the water until it is cool.
While the broccoli rabe is cooling, slice three cloves of garlic very thinly.
Start heating a 12-inch nonstick skillet over medium heat. Add 1/3 cup of olive oil.
Add the garlic to the skillet once the oil is hot. Cook the garlic until it is golden and aromatic. Remove the garlic from the pan.
Add the broccoli rabe to the fragrant olive oil. Toss to coat it with oil. Cook until the broccoli rabe is heated through, about three to five minutes. Remove it from the oil, and season it with a pinch of salt.
