Boneless Prime Rib
Boneless prime rib roasts can be prepared with an elaborate sauce or mustard, or they can simply be seasoned and roasted. To roast, first cook at a higher temperature to seal the crust, and then lower the temperature to continue cooking the inside of the meat.
Prep Time: 25 min.
Cook Time: 2 hrs. 20 min.
Ready In: 2 hrs. 45 min.
Set the oven to 500 degrees F.
Put the remaining ingredients in a blender or food processor and lightly blend until combined.
Place the meat in a roasting pan and generously rub the olive oil mixture over the outside.
Cook the meat for 20 minutes at 500 F, and then reduce the heat to 325 F. Continue cooking for about 2 hours or until the internal temperature reaches 130 F. Let the meat rest for 10 to 15 minutes before serving.
