Bonefish's original Bang Bang Shrimp recipe is kept secret, as of 2015, but there are a few copycat recipes. The ingredients include 1 lb shrimp, 1/2 cup mayonnaise, 1/4 cup Thai sweet chili sauce, 3 to 5 drops of hot chili sauce and 1/2 to 3/4 cup cornstarch.
To make a copycat version of Bonefish's Bang Bang Shrimp, thoroughly clean and devein each shrimp. In a medium mixing bowl, add in the mayonaise, Thai sweet chili sauce and hot chili sauce. Mix well. Using a large mixing bowl, add the cornstarch and bread the shrimp by placing a few in at a time and placing on a rack.
In a large heavy bottomed pot, heat a few cups of oil on medium-high. Deep fry the shrimp until they are fully cooked and turn a golden brown color. Drain the excess oil from the shrimp by laying them flat on a paper towel for a few minutes. Add the shrimp to the spicy mayonnaise mixture and toss evenly.
To serve Bang Bang Shrimp, clean and wash a head of lettuce. Remove the lettuce leaves whole and line individual bowls or one large serving bowl with the leaves. Add in shrimp and top with freshly chopped scallions.
