Preheat the oven to 375 degrees Fahrenheit. In a mixing bowl, combine 1 cup of rice flour with 2 1/2 teaspoons of baking powder and 1/8 teaspoon of salt. In a separate bowl, cream 3 tablespoons of butter and gradually mix in 1 cup of granulated sugar. Add 3 raw eggs to the butter-sugar mixture and continue to whisk until well-incorporated. Gradually whisk in the rice flour mixture, then add in 1 cup coconut milk and 1/4 cup fresh milk and whisk for about two more minutes.
Line a baking pan with a banana leaf and pour the mixture into the pan. Bake for 15 minutes, then remove the cake from the oven and top with sliced salted duck egg and 1/2 cup of grated cheese. Return to the oven and bake for 15 to 20 more minutes until the top begins to brown. Remove the cake from the oven and allow to cool before brushing with butter and sprinkling with sugar and grated coconut.
