Place the ribs on the grill meat side up, cover and let them cook. After about two hours, pour 1/2 of a beer into a shallow pan. Add the ribs to the pan, cover tightly with foil and return to the grill to cook for another three hours or until they are falling off the bone and ready to eat. If desired, top with barbecue sauce and grill for a few additional minutes to warm the sauce.
To cook spare ribs in the oven, coat them lightly in oil and generously sprinkle with your desired spice rub. Massage the spices into the meat, evenly covering the ribs. Place the ribs in a storage bag or bowl and marinate in the refrigerator for one to two hours.
Remove the ribs from the refrigerator and place them in a shallow pan covered tightly with foil or on a foil-lined cookie sheet with a foil tent covering the ribs. Cook in an oven preheated to 250 degrees Fahrenheit for three to four hours.
