To make Company's Coming pumpkin cheese cake, combine 1 1/4 cups of graham cracker crumbs, 4 tablespoons of softened unsalted butter and 1/4 teaspoon of ground cinnamon. Press the crust into a buttered springform pan, and bake it at 350 degrees Fahrenheit for five minutes. While the crust cools, cream together 3 8-ounce packages of cream cheese and 1 cup of sugar, and beat in 3 eggs one at a time. Stir in 1 cup of canned pumpkin, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon and 1/4 teaspoon each of ground nutmeg and allspice. Pour the cheese cake filling into the crust, and bake it for 60 minutes or until the top of the cake turns a darker golden color. Refrigerate the cake before serving it.
Make Company's Coming celery salad by creaming 1/2 cup of softened blue cheese and seasoning it with 1 tablespoon of Dijon mustard, 1/4 cup of red wine vinegar, 1/2 cup of olive oil, and salt and pepper to taste. Cut 1 pound of celery into 1/4-inch horizontal slices, and toast 1/2 cup of walnuts. Stir the walnuts and celery into the dressing, and serve.
