Two recipes that incorporate instant potatoes are instant potato pancakes and garlic instant potatoes. The instant potato pancakes are served with chopped chives and sour cream on top.
To make instant potato pancakes, mix 1 cup of cold water, one beaten egg and 1/2 tablespoon of salt until the salt dissolves. Then add 3/4 cup of dry potato flakes, and mix it in thoroughly. Add 1 tablespoon of chopped chives, one pinch of cayenne pepper and one pinch of ground black pepper. In a large skillet over a medium-high heat, mix 1 tablespoon of vegetable oil and 1 tablespoon of butter. Reduce the heat to medium and divide the mixture into four equal portions onto the skillet.
Cook each pancake until a brown crust forms, then flip it and do the same to the other side. To finish, top the pancakes with 1/4 cup of sour cream and 1 tablespoon of chopped chives.
The recipe for garlic instant potatoes is much simpler. In a large saucepan, boil 2 cups of water, 3 tablespoons of butter, 1/2 to 1 teaspoon of garlic powder, 1/2 teaspoon salt and 1/4 teaspoon pepper. Once the mixture boils, remove it from the heat. Finally, add 3/4 cup of milk and 2 cups of potato flakes to the mixture.
