Chicken soup is a common recipe that can be cooked quickly in a pressure cooker. First, brown two skinless chicken breasts in a pan over medium-high heat. Place one thinly sliced russet potato, 1/2 cup of dried lentils and 1/2 cup of long-grain brown rice in the pressure cooker. Season with 1 teaspoon of cayenne pepper, 1/2 teaspoon of ground ginger, 1/2 teaspoon of ground coriander and 1 teaspoon of kosher salt. Add 2 cups of chicken broth, 2 cups of water and the chicken. Cook for 10 minutes at high pressure, and serve.
Pulled pork is another great recipe for a pressure cooker. First, place two large chopped onions at the bottom of the cooker along with 1 1/2 cups of chicken broth. Make a spice mixture that combines 1 tablespoon of garlic salt, 1/4 cup of light brown sugar, 2 tablespoons of sweet paprika, 1 teaspoon of cayenne and 1 tablespoon of celery seeds. Season with 1 teaspoon of salt, and stir in 2 tablespoons of canola oil. Rub the mixture under the skin of a 4-pound boneless pork shoulder roast. Place the meat on top of the onions in the pressure cooker, and cook for 45 minutes. Remove the meat from the cooker, allow it to rest for 15 minutes, and trim off the fat.
