Roast chicken, pot roast, pulled pork and poached salmon are all examples of dishes that can be made in a clay cooker. This method works for any one-pot dish, including ratatouille, meatloaf, stews and casseroles. Cooks can also bake bread in a clay cooker.
Soak the cooker and its lid in water for 15 minutes before using it for any recipe. Never preheat the oven for a clay cooker.
To make roast chicken with leeks and apples, rinse a chicken, pat it dry with paper towel, and coat it in coarse salt and black pepper. Chop up an onion and fresh garlic to taste, and place this inside the cavity along with a lemon. Halve 4 leeks, and place them in the bottom of the cooker with a few sprigs of rosemary and 2 apples, quartered. Add 2 tablespoons of olive oil. Now place the chicken on top, cover the pot, and place it in a cold oven. Turn the heat to 500 degrees Fahrenheit, and cook for an hour.
To poach salmon, presoak the cooker, then place 4 salmon steaks inside. Combine 2 tablespoons melted butter, 1/2 cup beer, 1/4 cup chopped parsley, 1 clove crushed garlic, 1 teaspoon lemon juice and a pinch each of salt and pepper. Pour the mixture over the fish, place the lid on the cooker, and put it in a cold oven. Cook at 450 degrees Fahrenheit for 30 minutes. Remove from the oven, pour off the liquid, and return the salmon to the oven for five minutes to brown while the sauce is thickened in a saucepan with a little cornstarch or arrowroot.
