There are several different versions of the classic Waldorf salad recipe, but all incorporate apples, celery, a creamy dressing and walnuts. The dressing varies between a mayonnaise or salad dressing base and often includes miniature marshmallows that eventually melt into the dressing. Raisins and grapes are commonly added as well.
A version of the classic Waldorf salad made with mayonnaise starts with combining 1/2 cup of mayonnaise, 1 tablespoon of lemon juice, 1/8 teaspoon of salt and 1 tablespoon of sugar in a mixing bowl. Stir well to blend, and add 3 medium red apples, cored and diced, 1 cup of thinly sliced celery and 1/2 cup of raisins. Stir to coat evenly with dressing. Chill for an hour before serving, if desired. Serve with 1/2 cup finely chopped walnuts sprinkled on top.
The version using salad dressing calls for 3 cups of chopped apples, 1 cup of thinly sliced celery, 1/2 cup of chopped walnuts, 2 cups of miniature marshmallows and 1/2 cup of salad dressing, such as Miracle Whip. Mix all the ingredients together, and serve immediately, or chill until ready to serve.
For variety, add 1 cup of halved grapes, 1 thinly sliced banana, 1/4 cup of flaked coconut or 1 cup of chopped dates. To make this a meal, add 2 cups of cooked chicken or turkey, chopped.
