A classic pumpkin pie recipe from the Food Network requires pie dough, all-purpose flour, pure pumpkin and heavy cream. It also uses granulated sugar, eggs, ground cinnamon, freshly grated nutmeg, vanilla extract and salt. Coarse sugar is optional.
Shape 1 disk of pie dough into a 12-inch shape on a floured surface. Transfer to a 9-inch pie plate. Fold any dangling dough over. Use fingers to crimp the edges, and use a fork to pierce the dough. Refrigerate the dough, and let chill for 1 hour.
Preheat oven to 350 degrees Fahrenheit. Surround the dough with foil, and place pie weights or dried beans at the center of the plate. Bake in the oven for approximately 20 to 25 minutes. Discard the foil, and continue cooking the dough for another 10 to 15 minutes. Place on a cooking rack to cool.
For the filling, combine 1 15-ounce can pure pumpkin, 1 1/4 cups heavy cream, 2/3 cup granulated sugar, 2 eggs and 1 teaspoon cinnamon. Add 1/2 teaspoon nutmeg, 1/2 teaspoon vanilla extract and 1/4 teaspoon salt, and mix gently. Coat the edge of the pie crust with 1 egg. If desired, add coarse sugar to the crust. Place the filling into the crust, and bake for 50 minutes to 1 hour. Set on a rack to cool, and serve.
