To make macadamia-almond Christmas cookies, blend 2 cups of macadamia nuts in a food processor until they become buttery, and add 1 1/2 cups of sugar, 12 tablespoons of softened unsalted butter and 1/2 cup of vegetable shortening. Mix in 2 eggs, 1 tablespoon of vanilla extract and 1 tablespoon of almond extract until the mixture becomes well-blended. Add 2 3/4 cups of all-purpose flour, 1 1/4 teaspoons of baking soda and 1/2 teaspoon of salt. Stir in 1 cup of chopped pistachios, 1 cup of dried cranberries and 2 cups of white chocolate chips, and refrigerate the dough for 30 minutes before dropping spoonfuls onto a baking sheet. Bake at 375 degrees Fahrenheit for 10 minutes, and press red-and-white striped chocolate kisses into the center of the cookie.
Make cream cheese spritz by creaming together 1 cup of butter, 1 package of cream and 1 cup of sugar, and then adding 1 egg yolk 1 1/2 teaspoons of vanilla extract and 2 1/2 cups of flour. Pour the dough into a cookie press, and press out spritz cookies onto a baking sheet. Bake the cookies at 375 degrees Fahrenheit for 12 to 18 minutes, and allow to cool before serving.
