Portobello Burgers with Guacamole and Chicken-less Salad are some of Christina Pirello's popular natural cooking recipes. To make the portobello burgers, remove the stems from four portobello mushrooms. Brush each mushroom with oil, and sprinkle each with a dash of salt and pepper. Lay the mushrooms into a medium skillet set over medium-high heat, and cook the mushrooms until they are tender, about four minutes per side.
Transfer the mushrooms cavity-side-up to a plate, and lightly cover them with foil. Add 1 teaspoon of oil, 1 red onion thinly sliced from top to bottom and each slice cut into half moons, and 3 cloves of fresh minced garlic to the same skillet. Sauté the onions and garlic over medium heat, and toss with a splash of balsamic vinegar when the onions begin to sizzle. Add dashes of salt and pepper to taste.
Mash 2 halved, pitted avocados. Combine the avocados, 2 diced plum tomatoes, the fresh juice of 1/2 of a lemon and chili powder and salt to taste. Spread the guacamole on the bottom half of each burger bun. Lay on a slice of romaine, a slice of tomato, the portobello and the top half of each burger bun.
