To make the portobello burgers, remove the stems from four portobello mushrooms. Brush each mushroom with oil, and sprinkle each with a dash of salt and pepper. Lay the mushrooms into a medium skillet set over medium-high heat, and cook the mushrooms until they are tender, about four minutes per side.

Transfer the mushrooms cavity-side-up to a plate, and lightly cover them with foil. Add 1 teaspoon of oil, 1 red onion thinly sliced from top to bottom and each slice cut into half moons, and 3 cloves of fresh minced garlic to the same skillet. Sauté the onions and garlic over medium heat, and toss with a splash of balsamic vinegar when the onions begin to sizzle. Add dashes of salt and pepper to taste.

Mash 2 halved, pitted avocados. Combine the avocados, 2 diced plum tomatoes, the fresh juice of 1/2 of a lemon and chili powder and salt to taste. Spread the guacamole on the bottom half of each burger bun. Lay on a slice of romaine, a slice of tomato, the portobello and the top half of each burger bun.
