Chillies are not in season the entire year. By canning them, the flavor stays fresh and can be used all year long.
Step 1: Purchase the chillies.
Buy fresh peppers. Discard any that are spoiling.
Step 2: Clean jars.
Wash and boil the jars to sterilize them to prevent bacteria from growing. Allow them to dry completely.
Step 3: Prepare the chillies.
Chop or roast the peppers. Chopping them will emit a spicier flavor.
Step 4: Mix the liquid.
Pour 1 cup of water, 3/4 cup of oil and 5 cups of vinegar together. Add a dash of salt and boil.
Step 5: Fill the jars.
Place the peppers in the jars and cover with liquid. Boil the containers for 15 minutes, or until the tops of the jars have sealed.Learn more about Cooking
