To make an easy chili sauce, stir together 1 cup tomato sauce, 1/4 cup brown sugar, 2 tablespoons vinegar and 1 teaspoon all spice until blended. Cover the sauce and store in the refrigerator until ready to use.
For an easy chili sauce that uses the stove and more spices, boil one large can chopped tomatoes, two chopped onions, 1 teaspoon salt, 1 cup brown sugar and 1/2 cup vinegar with 1/2 teaspoon cloves, cinnamon and all spice. Cook the mixture until thick, and store until ready to use.
To make another chili sauce variation, place two 28-ounce un-drained cans of plum tomatoes, 1 cup cider vinegar, two peeled, cored and diced apples, one diced onion and 1 cup finely chopped celery in a large pot. Add in 3/4 cup brown sugar, 2 teaspoons salt, 1 teaspoon all spice and cinnamon, 1/4 teaspoon cloves and 1/8 teaspoon cayenne pepper. Bring ingredients to a boil, then simmer for about 90 minutes or until thick, stirring often. If tomatoes do not break apart while cooking, smash them against the side of the pot with a spoon. The completed chili sauce can be sealed in hot, sterilized jars and kept in the back of the refrigerator until ready to use.
