A chicken salad sandwich contains chopped rotisserie chicken without the skin along with vegetables, condiments and seasonings. Garnish with lettuce and tomato, and serve on sourdough rolls.
Take 2 cups of chopped chicken and mix with 1/2 cup diced celery, 1/3 cup diced carrot and 1/3 cup diced red onion. Add 1/2 cup mayonnaise with olive oil and 2 tablespoons of yellow mustard. Season with 1 teaspoon celery salt, 1 teaspoon granulated garlic, a pinch of paprika and 1 teaspoon freshly ground pepper. Stir together in a bowl until blended. Scoop the combined salad onto toasted rolls, and top with lettuce and tomato.
