Celebrity chefs who developed great pie crust recipes include Food Network's Ina Garten and Carla Hall from "The Chew." A key secret to making perfect pie crust is chilling some or all of the ingredients before mixing them together.
Ina Garten's Barefoot Contessa pie crust is easy and makes two 10-inch crusts. Dice 1 1/2 sticks of cold butter, and refrigerate. In a food processor, combine 3 cups all-purpose flour, 1 teaspoon kosher salt and 1 tablespoon sugar, pulsing until just mixed.
Add in the chilled butter and 1/3 cup cold shortening, and pulse until the butter becomes pea-sized. Pour in 1/2 cup ice water while the machine is running, and continue pulsing to form a dough ball. Roll into a ball on a floured surface, wrap in plastic wrap and refrigerate for 30 minutes.
Step one in making Carla Hall's pie crust is dissolving 1 tablespoon sugar and 1/2 teaspoon salt in 1/3 cup water, chilling the mixture for 30 minutes. Cut 2 sticks of cold, diced butter into 2 1/4 cups cold flour, beat 30 seconds, add the water mixture and beat into big chunks. Form two 1-inch-thick disks, wrap and refrigerate until firm.
