Some cauliflower recipes include oven-roasted cauliflower with garlic, olive oil and lemon juice; caramelized cauliflower soup; pizza with cauliflower crust; and whole roast cauliflower with cumin, sumac and lemon. Make the latter by placing 2 small cauliflowers on a baking sheet and drizzling them with olive oil. Sprinkle the vegetables with 1/2 teaspoon of sumac, 1/2 teaspoon of cumin and sea salt. Roast the cauliflowers at 375 degrees Fahrenheit for 45 minutes, and serve them drizzled with lemon juice.
To make oven-roasted cauliflower with garlic, olive oil and lemon juice, put 5 cups of cauliflower florets in a roasting pan, and toss them with 1/4 cup of extra-virgin olive oil, 2 tablespoons of lemon juice, 1 tablespoon of sliced garlic, 1 teaspoon of salt and 1/2 teaspoon of pepper. Roast the cauliflower at 500 degrees Fahrenheit for 15 minutes, tossing a few times throughout the cooking time. Serve the cauliflower sprinkled with 2 tablespoons of grated Parmesan and chopped chives.
Make pizza with cauliflower crust by grating 1 cauliflower head and boiling it for 5 minutes in a pot of water. Drain the cauliflower, and spoon it into a towel, wringing out all the moisture. Mix together the cauliflower, 3 1/2 ounces of goat's cream cheese, 1 egg, and salt and pepper to taste. Press the cauliflower mixture into a crust on a baking sheet, and cook at 400 degrees Fahrenheit for 30 to 35 minutes.
Meanwhile, sauté 1 chopped onion in olive oil, and then add 3 minced garlic cloves, 1 can of chopped tomatoes, 1 handful of chopped fresh basil and 1 pinch of dried chili flakes. Simmer the mixture for 20 minutes before spooning it onto the baked cauliflower crust along with any desired pizza toppings. Bake the pizza at 450 degrees Fahrenheit until the cheese melts.
