To make bacon and egg casserole, cook 8 slices of bacon in a skillet pan until crisp, and place cooked slices on paper towels to drain. Crumble the bacon. Drain all but 2 tablespoons of bacon drippings from the pan, and cook 1 medium chopped onion in drippings for three minutes. Cut 1 loaf Italian bread into 5 cups of bread cubes, and spread half of the cubes into the bottom of a 13 by 9-inch baking dish. Sprinkle half the onion and crumbled bacon over the bread cubes, followed by 1 cup shredded cheddar cheese, 1/2 cup shredded Mozzarella cheese and 1/2 cup cottage cheese. In a bowl, beat 5 eggs using a wire whisk, and beat in 1 1/2 cups milk, 2 teaspoons ground mustard, 1/2 teaspoon nutmeg and 1/2 teaspoon pepper. Pour the egg mixture over the bacon mixture, and gently press bread cubes into the egg mixture until cubes are covered. Allow the mixture to stand for 10 minutes, and bake for 40 to 50 minutes at 350 degrees Fahrenheit.
For potato bacon casserole, gather together 4 cups shredded frozen hash brown potatoes, 1/2 cup finely chopped onion, 8 ounces cooked bacon, crumbled, and 1 cup shredded cheddar cheese. Layer a greased 8-inch baking dish with half the potatoes, onion, bacon and cheese. In a bowl, combine 1 can evaporated milk, 1 large egg and 1 1/2 teaspoons salt. Pour egg mixture over potato mixture, cover, and bake for 55 to 60 minutes; uncover and bake five minutes.
