Ground turkey casserole recipes include ground turkey and hominy, as well as ground turkey spaghetti pie. Ground turkey is versatile, replacing ground beef in many recipes. It is lower in fat.
Prepare ground turkey and hominy by cooking 1-1/2 ground turkey in olive oil with a large chopped onion. Once it is no longer pink, add a teaspoon of minced garlic and cook for another minute. Add two 14.5-ounce cans of diced tomatoes with juice to the pan along with a teaspoon of salt, 1 1/2 teaspoons cumin, 1/2 teaspoon ground mustard, 1/2 teaspoon dried thyme and 1/4 teaspoon ground cinnamon. Also add 1/4 teaspoon ground allspice and 1/4 teaspoon black pepper, and heat to a simmer. Drain and rinse two 15.5-ounce cans of hominy, add them to the casserole, and continue heating to warm it.
For ground turkey spaghetti pie, line a 7-inch pie pan with cooked spaghetti mixed with an egg and 2 tablespoons Parmesan cheese to form a crust, and spread 3 tablespoons of sour cream across the top. Cook 1/2 pound ground turkey, 1/4 cup of chopped bell pepper, 2 tablespoons of chopped onion, salt and pepper. Mix in 1/3 cup tomato sauce and 1/4 teaspoon each of oregano and garlic salt. Place the mixture in the crust, and top with 1/3 cup of mozzarella cheese. Bake the casserole in a 350 degree Fahrenheit oven for 15 to 20 minutes until the cheese melts.
